Of course, we know that this beautiful bird is just that, a beautiful creation of God. The word Peacock is used in the Bible, (1 Kings 10:22, repeated in 2 Chron 9:21). Which is believed to be a baboon or ape, not the bird. See H8500. With that said, I don’t think there is anything Christian symbolism in this beautiful bird.
I am not sure why they brought this bird up, but maybe because the passengers of Flight 828, seem to have resurrected, because they were missing for 5 1/2 years and came back. The people that were left behind, believed they were dead and they came back to life in that TV show.
