  • Binding
  • Leavening
  • Flavor
  • Moisture
  • Appearance
  • Emulsify

Substitute Eggs with …

  1. Corn starch 2 Tablespoons and water 3 Tablespoons
  2. Apple sauce ¼ cup
  3. Bananas, mashed ¼ cup
  4. Ground flaxseeds 1 Tablespoon (ground) and 3 Tablespoons of water
  5. Chia seeds 1 Tablespoon (ground) and 3 Tablespoons of water
Egg Substitutes
  1. Mayonnaise 3 Tablespoons
  2. Arrowroot 2 Tablespoons and 3 Tablespoons of water
  3. Carbonated Water ¼ cup
  4. Oil 1-1/2 Tablespoons, Water 1-1/2 Tablespoons, Baking Powder 1 teaspoon
  5. Silken tofu ¼ cup
  6. Vinegar 1 Tablespoon and Baking Soda 1 teaspoon
  7. Yogurt ¼ cup
  8. Buttermilk ¼ cup
  1. Aquafaba (leftover bean water) 3 Tablespoons – egg whites
  2. Nut butter 3 Tablespoons
    • Peanut butter
    • Cashew butter
    • Almond butter
  3. Gelatin (vary how to use)
  4. Soy lecithin (soybean oil) 1 Tablespoon – egg yolks
  5. Soy protein 1 Tablespoon and Water 3 Tablespoons
  6. Avocado, mashed ¼ cup
  7. Pumpkin, purée ¼ cup
  8. Egg replacer (potato starch, tapioca flour, baking soda, and psyllium husk)
  9. Oats 2 Tablespoons and Water 3 Tablespoon (can also add Flour 2 Tablespoons)
  10. Breadcrumbs (Panko) and Heavy Cream
  11. Agar 1 Tablespoon and Water 3 Tablespoons

The variables listed above may vary based on what you are making and substituting eggs for.
